A rich, fleshy, hearty and ripe, plummy and toasty flavoured Merlot with good structure. Full-bodied with flavours of sweetly ripe black berries and plums. 


Glossy garnet-red colour and oozes attractive aromas of raspberry coulis, cherry and dark chocolate. In the mouth expect lavender and dried thyme, supple, easy tannins and a smooth, warm finish.


Cellar well for the next 5-6 years.


Vineyard

Premium Bordeaux style Merlot and Cabernet blends are the flagships of the Abbey Cellars range together with small amounts of premium Classic and Noble Rieslings.

Situated on red metal soils in Hawkes Bay, New Zealand, Abbey Cellars is a boutique 'single estate' producer owned and operated by the Haworth family. Abbey Cellars wines have an exclusive focus on producing smaller volumes of hand-picked ultra premium quality wine.


Winemaking 
Fruit was picked on flavour-ripeness then crushed and destemmed into open fermenters followed by a cold soak for 48 hours to extract maximum colour and flavour before being warmed up and inoculated with selected red wine yeasts. During a warm, ten day fermentation at 28 degrees the cap was hand-plunged to gently extract tannins, to maintain colour stabilization and add structure without harsh phenolics. Following ferment, the free-run wine was pumped away and the skins were transferred by hand to the press where pressing were extracted separately and added back later to enhance colour and structure.


Food Pairing
A great match for peppered fillet steak and mushroom, roasted game meat and casseroles.

85% Merlot, 7% Malbec, 5% Cabernet Franc and 3% Cabernet Sauvignon fermented to 14.0% alc., the wine aged 13 months in approx. 35% new French oak. Very dark, deep, near impenetrable black-red colour with youthful purple hues. This has a full and densely packed nose of ripe black berry and black plum aromas along with Asian spices, and toasty, bacon-like oak notes. Full-bodied, the flavours of sweetly ripe black berries and plums fill the mouth. The fruit is melded with layers of blue fruits, spices, and toasty oak that unfold in waves, enriching the fruit. The mouthfeel is soft and fleshy, with good tannin structure and fresh acidity in support, providing texture, vitality and line. The flavours carry through to a long and concentrated finish of spiced plums and toasty oak. This is a rich, fleshy, hearty and ripe, plummy and toasty flavoured Merlot with good structure.
