An elegant yet powerful wine with ample layers of toasty brioche, apricot, warm, sun-ripe lemon, mealy honeycomb and a sprinkle of white pepper are finely supported by wonderful acidity that finishes long and lovely. A true classic, this wine will continue to age for many years.
Since 1992, Chardonnay has been the leading lady of Foxes Island. This Chardonnay 2011 is their 20th vintage, released with pride and pleasure by the vineyard.
A relatively warm growing season by cool climate standards with 20 days over 30°celsius recorded in the vineyard. the grapes were beautifully ripe with concentrated flavours. Hand Harvested around 23° Brix, The grapes were lightly pressed and the resulting juice was then transferred to French oak barrels for natural fermentation by indigenous yeast. Fermentation took 11 months to complete. The resulting wine was then bottled & cellared for 3 years prior to release.
