OUT OF STOCK. Full and light, with a creamy-mineral texture. The palate shows great complexity with nettles, lanolin, cedar oak and smoke. A restrained Sauvignon Blanc with great complexity and balance.
Clean with great balance between fruit and oak. Pungent aromas of nettles, green capsicum, lychee and passion fruit, with undelying cedar oak, smoke, flint and wet slate.
Pale green/straw colour.

Handpicked fruit from the open lyre trellis “Home Block” vineyard went into this Sauvignon Blanc. The 2015 vintage was another classic year for white grapes in Margaret River. The very low cropping year produced intensely flavoured grapes with balance acid and sugar levels.
The handpicked fruit was harvested very early in the morning, then sent immediately to the winery for processing. 54% of the wine was fermented in stainless steel with a known yeast strain. The remaining wine was fermented in French barriques with 14% of the blend being fermented with wild yeast on medium solids. The final blend was put together in July 2015.
Bottled under screw cap into a premium burgundy bottle in July 2015. After elevating the Sauvignon Blanc to the ‘Premium’ status within the Forester range in 2009, we have further increased the structure and complexity of the wine through barrel fermentation, partial wild fermentation and storage on lees.
