Light body with fresh and good acidity. Aromas of peach and apple with flavours of white flowers.
Xynisteri is an indigenous white grape grown on Cyprus with about 500 hectares of the vineyards in Cyprus planted it. The wine made from the Xynisteri are often light body with low alcohol content. It is a recommended variety for the dessert wines of the island tradition.
Based on a specific Cypriot variety, which allows us to blend it with others. With a small amount of Chardonnay, this wine is light, offers aromas of fruit and freshness and is ideal for quick consumption.
Grapes are sourced from the vineyards situated in the highest area viticulture in Paphos Area (Vouni Panaceas and Statos-Agios Fotios villages). The vineyards are of attitude 850-1100m, where the density of vines are approximately 3000 per hectare, at average yields of 40HI/Ha. The average age of productive vines are 50 years.
Harvested between 25th September and 20th October, the grapes are destemmed and crushed, fermented at thermo-controlled temperate of 14˚C with an average time of croextraction of 6-8 hours. Aging is done 25% in acacia 2.25 hectolitre barrels for 3 months and 15% in French oak barrels for 3 months.
