This special bottling of Sauvignon Blanc showcases the very best of our estate and is made only in years when fruit is of exceptional quality. Careful canopy and yield management, including leaf plucking and shoot thinning, ensure great concentration and character. Grapes are whole-bunch pressed for gentle extraction and fermented with indigenous yeast in seasoned oak barriques. Partial malolactic fermentation balances out acidity and adds weight to the palate. Aging for 14 months in barrel provides additional aromatics, flavours and structure.

A vineyard on bonier soils was pruned to lower yields and give greater flavour concentration. The fruit was hand-picked, whole-bunch-pressed, fermented using indigenous yeasts and aged in older barrels. There was no sulphur addition prior to fermentation to remove the punchier aromatics and build texture. The result is a rich, weighty Sauvignon Blanc with strong stone fruit flavours and plenty of toasty, savoury, nutty characters. Good food wine. Ageing: now-2019.
