The hand-picked fruit was held in cold storage overnight to eliminate the need for must chilling once it had passed through the crusher. After pressing off skins and separating press fractions, the juice was allowed to settle naturally before racking to achieve a desired level of solids. A portion of the juice was sent straight to barrel for barrel fermentation, while the majority of the juice commenced fermentation in temperature controlled stainless steel vats and was then transferred to French oak barriques. Partial wild fermentation in barrel was also used to add complexity and texture. Stirring of the yeast lees continued for four months before the wine was allowed to clarify and rest on lees for a further five months prior to blending.
