Out of Stock! This Pinot Noir shows the influence of the Wairau Valley's unique climate and complex soils. This wine has vibrant colour and fine tannins ensured by the use of hand-plunging techniques during fermentation. The aromas and flavours are packed with dark cherry, Black Doris plum and savoury spice. The palate delivers silky smooth tannins with a lengthy finish.
Winemaking
We gently harvested during the cool morning hours to retain the bright, pristine, characteristics of the grapes. With the fruit arriving at our winery possessing such extraordinary favours and texture, our primarily task is to preserve and enhance those elements. Our Pinot Noir shows the influence of our unique climate and complex soils. After harvesting, grapes are cold-soaked for six days. We used traditional hand plunging technique during fermentation to ensure vibrant colour and fine tannins. The wine is then aged in French oak barrique for 11 months.
