A refreshing palate of peach and ripe citrus is followed by a wonderfully clean finish that will compliment most desserts and especially cheese. The wine has a pristine pale colour; the aroma has slight notes of golden delicious apple and orange blossom. This wine will continue to develop favourably over the next 3-5 years, gaining richness and complexity.


Winemaking

Spring rainfall was below average which helped disease control and provided ideal conditions for the flowering period. Dry conditions though early summer helped us control vine vigour resulting in balanced canopies. From veraison through to harvest, the weather was ideal with minimal moisture and cool nights resulting in exceptional fruit flavor development and acid retention. Exceptionally dry conditions towards the end of vintage minimised disease pressure allowing for perfect ripening.
Initially treated in the vineyard as high-end dry Riesling to ensure good acid levels and early flavour development, the grapes are then dried on the vine and handpicked very late in the season. After crushing/destemming it is cool fermented using sugar tolerant yeasts in stainless steel. The fermentation process for late harvest wines is slow due to the increased concentration in the initial must. The wine is then gently fined and filtered before bottling.
This wine will continue to develop favourably over the next 3-5 years, gaining richness and complexity.

92 Points - Huon Hooke, The Real Review. "Full straw-yellow colour with tea-leafy, floral and preserved lemon aromas, some buttery toast notes, and a slight lift from volatile acidity. The wine is rich and sweet in the mouth, the palate backed by crisp and firm acidity, the finish balanced and cleansing rather than mawkish, thanks to the acidity. Very good."
